Brewer:

 

We are looking for a Brewer to join our Production Team!

 

Job Description: The Brewer is responsible for the creation of wort on 7,15 and 30 bbls batches. Work with the Brewing Operations Director to oversee all aspects of production involving brewing, fermentation, conditioning, and packaging of beer. The brewer will work with the brewing team on monitoring fermentation (gravity, carbonation, temperatures, PH, DO, etc.), sampling and participating in taste panels. They will also be expected to maintain a clean and sanitary work environment, providing accurate and legible records, following all SOPs and safety protocols

 

 

Responsibilities (all brewing operations including but not limited to):

 

  • Wort creations and brewhouse production

  • Handling and regular inventory management of raw materials

  • Help with new recipe development and test batches

  • Forklift operation

  • Brewhouse Clean In Place ( CIP )

  • Transfer beer from Brewhouse to Fermentation Vessel

  • Yeast harvesting & propagation

  • Detailed Record Keeping (utilizing Beer Sheets provided)

  • Receiving deliveries

  • Assist in routine maintenance on equipment

  • Cleaning floors, drains, walls, outside of tanks

  • Assist on canning line when needed

  • Assist in preventative maintenance on various equipment

  • Using instruments such as a Zahm, Dissolved Oxygen Meter and other laboratory testing devices  

  • Perform Fermentation checks, gravity testing, PH, Diacetyl, and Forced Fermentation tests

  • Cleaning the floors, outsides of tanks, miscellaneous parts, floor drains, walls etc.

  • Assist in finding areas of opportunity for improvement

  • Dry-hopping and other post-fermentation additions to the beer

 

 

Working Conditions:

Must be capable of handling hot grain, lift 55+ pounds repeatedly and 165lbs waist high. Ability to handle hot and cold liquids as well as handle oak barrels. Work in a high temperature environment, 90+ degrees as well as working cold environments of 34 degrees. Capable of proper handling of hazardous materials and operation of complex machinery. Frequent bending, pushing, lifting, kneeling and reaching.

 

Knowledge:

  • We require a sound understanding of the brewing process.

  • We encourage creativity in helping us produce new beers.

  • Must be able to strictly follow recipes and our standard operating procedures.

  • Writing and math skills necessary to accurately measure volume, flow, density, weight, length, pressure, and other unit conversions, calculate beer volumes/losses, and alcohol content.

  • Capacity to manage multiple tasks and exhibit apt time management skills. Must have flexible schedule, some weekends required as well as some travel for beer related events.

 

Requirements: Must be 21+ years old and have proof of eligibility to work in the US.

Must have transportation and be able to work in both facilities located in Casselberry and Longwood FL.

 

Experience: 1-2 year experience in a similar role in a production brewery or brewpub. Forklift certification is a plus.

Assistan Cellarman

 

We are looking for an Assistant Cellarman to join our Production Team!

 

Job Description: The Assistant Cellarman is responsible for working with the Cellarman in maintaining all cellar operations involving fermentation, conditioning, and packaging of beer. This is an entry-level position for someone looking to get their foot in the door of the craft beer industry. The Assistant Cellarman will report to the Head Brewer and work with the brewing team on monitoring fermentation (gravity, carbonation, temperatures, PH, DO, etc.), sampling and participating in taste panels. They will also be expected to maintain a clean and sanitary work environment, providing accurate and legible records, following all SOPs and safety protocols

 

 

Responsibilities (all cellar operations including but not limited to):

  • Handling and regular inventory management of raw materials

  • Vessel Clean In Place ( CIP )

  • Assist Cellarman to Transfer beer from Fermentation Vessel to Brite Tank

  • Keg cleaning

  • Yeast harvesting & propagation

  • Detailed Record Keeping (utilizing Beer Sheets provided)

  • Receiving deliveries

  • Assist in routine maintenance on equipment

  • Cleaning floors, drains, walls, outside of tanks

  • Follow Proper SOPS for cleaning tanks and prepping for transfers

  • Packaging beer in kegs

  • Work on canning line as part of packaging team

  • Assist Preventative maintenance on various equipment

  • Arrange the cooler, put together distribution orders and wrap pallets

  • Using instruments such as a Zahm, Dissolved Oxygen Meter and other laboratory testing devices  

  • Perform Fermentation checks, gravity testing, PH, Diacetyl, and Forced Fermentation tests

  • Cleaning the floors, outsides of tanks, miscellaneous parts, floor drains, walls etc.
